My LBD of a cake

As much as I love puttering in the kitchen and making involved, multi-step recipes, most days I need quick recipes to get me through a busy day. I don't, however, like to compromise flavour and quality for a quick meal.

Last weekend I found myself squeezed for time and in need of a casual (and incidentally, gluten-free) birthday cake. Rozanne came to the rescue with her "Little Black Dress" Chocolate Cake. Just butter, eggs, chocolate, vanilla and 18 minutes in the oven. Voila! A sumptuous, soft- centred, dark, just-sweet-enough stunner of a cake. I adorned my LBD cake with lightly sweetened, brandy laced whipped cream and a sprinkle of chopped toasted almonds.

Loads of flavour, impressive yet quick and simple. Now I can have my cake and eat it!
