For the past 25 years, this venerable and (Vancouver Island) local business has been producing a Balsamic Vinegar to rival the artisan "vinegarians" of Modena Italy. But, in the ideology of the Modena Balsamic Vinegar Society, it takes 25 years of continuous and exceptional presentation of an outlier producer to receive the status of designation for the ancient method vinegar.
So today we celebrate 25 years of excellence, how marvelous to embrace the challenges of farming and creating, allowing our community to appreciate such fine Balsamic Vinegar. Today we will enjoy both a vinegar tasting and a sampling of delectable morsels prepared with the Balsamic Vinegar by the talented Chef Max Straczek of Fable Restaurant.
