For the Love of Soup By Jeanelle Mitchell
If you're anything like I am, you have a recipe or two that you search the index for when buying a cookbook about a particular subject. When it comes to soups, my Holy Grail recipe is a really good corn chowder. Jeanelle Mitchell has included two in For the Love of Soup-Clam and Corn Chowder and Corn and Chicken Chowder. These are in addition to over 100 irresistible and easy-to-prepare recipes found in this enticing book.
Why make stock when you can buy it in cubes? Because it tastes better, and it's better for you. Try a few of the low fat, low-sodium recipes from Mitchell's opening chapter on Blue Chip Stocks and you'll never go back to bouillon. From there, a handful of ingredients and a couple of simple steps are all that stand between you and a bowl of comforting Bean and Barley Soup, velvety Ginger Orange Carrot Soup, or hearty Beef Goulash Soup with Noodles.
For the Love of Soup feels like it was compiled by a kind and considerate next-door neighbour. First-time author Mitchell has gone out of her way to make For the Love of Soup as accessible as her recipes are enjoyable.
Ingredients are simple and readily available in most supermarkets, the print is large and easy-to-read, and Mitchell has included sections on Helpful and Healthful Hints that no cook (soup or otherwise) should be without. There's even a heartwarming introductory note by her daughter. Proceeds from the sale of For the Love of Soup go to Mitchell's nephew, Yves, who requires a great deal of support and therapy after being disabled in a car accident ten years ago and to whom she has dedicated her book.
