Each slim hardcover in the Cook’s Illustrated How To series literally fits in your pocket and contains nuggets of information on a particular set of dishes or ingredients.  As for casseroles, most of my memories surround Mom’s leftover specials and forays into church supper territory.  How to Make Pot Pies and Casseroles covers that territory with some extensively tested recipes for basics such as Macaroni and Cheese, Lasagna, Shepherd’s Pie.  With a nod to modernity and the development of international tastes there are also recipes involving Italian Sausage and Polenta, and a yummy Jambalaya with Chorizo and Shrimp. 

What I appreciate about the Cook’s Illustrated library are the introductions to each chapter explaining the recipe testing of each dish.  Each chapter explained in kitchen science terms things such as why you really ought to go buy evaporated milk to make a silky sauce for mac and cheese.  I’ll never cheat with 2% again.
