What is Verjuice? To quote from one of our favorite books (The New Food Lover’s Companion, Third Edition) “Verjuice is an acidic, sour liquid made from unripe fruit, primarily grapes. Verjuice is used in preparations like sauces and mustards to heighten flavour, much as lemon juice or vinegar would be employed.”

Maggie Beer, one of Australia’s leading lights in the art of food and the kitchen is a great believer in the virtues of verjuice has compiled a very tidy book such wonderful recipes that they make you want to run right out to the store and buy this magic elixir. For example, Stuffed Trout with verjuice sauce or peaches stuffed with amaretti, almonds and ginger baked in verjuice. Ms. Beer also tells of her discovery and research of this ingredient when a crisis in the Barossa Valley left her family with tons of unsellable grapes.
