Don Genova Presents Food Culture:
From Fast Food to Slow Food

In this series of eight lively classes, students will learn about the history of food culture in both Europe and Canada. Between May 5th and June 30th, food journalist Don Genova will explore the differences between artisanal and industrial food production, sustainable farming and fishing practices, and movements such as Slow Food and the 100-Mile Diet. Don recently returned from Italy’s University of Gastronomic Sciences with his Master’s Degree in Food Culture in hand. 	Introduction: Monday, May 5th, 6:00 pm Journalist Don Genova and Slow Food Vancouver President Christina Beaudoins will lead an informative introductory lecture and discussion on food culture and the Slow Food movement. 	Olives & Olive Oil: Monday, May 12th, 6:00 pm Revel in the delicious complexities of olive oil with Don Genova, from its Mediterranean origins to modern production and marketing. Guests will take part in a tasting, enjoy a variety of olives, and take home a copy of Ford Roger’s classic Olives cookbook. Guests: 25 - Cost: $65.00
	Cheese & Terroir: Monday, May 26th, 6:00 pm Allison Spurrell of Les Amis du Fromage and Don Genova will explore the history and production techniques of aged and fresh cheeses, while guests enjoy a tasting of a variety of B.C. delicacies. 	Feasting, Fasting & Wine: Monday, June 2nd, 6:00 pm Religious and medical beliefs inspired the feasting and fasting of the Middle Ages, a trend that continues today, explains Don Genova. A B.C. wine tasting will follow, hosted by John Hunt of Firefly Wines, which includes a copy of John Schreiner’s B.C. Wine Country. Guests: 25 - Cost: $65.00
	Sustainable Seafood: Monday, June 9th, 6:00 pm Don Genova and Agassiz’s Bruce Swift will discuss sustainable fishing techniques and Bruce’s unique closed-cycle polyculture operation. 	Salumi & Charcuterie: Monday, June 16th, 6:00 pm Jan Van Der Lieck joins Don Genova for a tasting of Oyama Sausage’s superlative cured meats. Don presents photos and video of how Italian classics such as Parma Ham and Culatello di Zibello are produced. Prosciutto, Pancetta, Salame features dozens of Italian recipes. 	Food Security: Monday, June 23rd, 6:00 pm Don Genova considers the meaning of food security and whether it can be found in Canada, British Columbia, or Vancouver. 	Food & the Media: Monday, June 30th, 6:00 pm Nick Versteeg, the award-winning filmmaker behind countless culinary documentaries, talks with Don Genova about the ways in which media coverage, advertising, and branding affect the way we eat and drink.
